Our proudest moments at Heidrun come when we release a new varietal composed of honey from our own hives located in an area we have not previously farmed. What’s special about these occasions is that they provide our first ever glimpse into the floral terroir of the area. Literally, we are the first humans ever to taste this collection of floral nectars, as expressed in a mead. It’s impossible to not be excited by that!
The brand new release of our Sonoma Mountain Apiary Wildflower represent one such moment. It has taken three years to develop the hives at this apiary on the south flank of Sonoma Mountain. The mead itself is elegant and refined, with many characteristics of an exquisite Champagne; light straw in color, crystal clear, robustly effervescent, and brut dry. There is a bright and refreshing acidity on the palate and the finish is clean. Don’t pair this with anything; just enjoy it on it’s own.
