California Buckwheat Blossom is a varietal that’s been out of circulation for many, many years but is finally back and is better than ever. It’s modestly fruity but not sweet, the acidity is neutral and it has the most invitingly familiar flavor of a light honey that, I believe, we’ve ever concocted in a sparkling mead. It's light on the palate and delicate.
