The honey for our newly released Arizona Desert Mesquite varietal was sourced out of an apiary in the Sonora desert. The honey is amber in color and has a subtle mesquite woodiness that one might expect from this desert scrub plant. Interestingly though, the mead we've produced from this honey variety does not share that quality. Instead, we have here a delicate and clean, light-straw colored, brut dry, fully mousseaux varietal with a mild (but not sweet) melon-and-pear fruitiness. It's the kind of bubbly one might want to enjoy after a parched day in the desert.
